  • 60 g Comté shaving
  • 2 tbsp olive oil
  • 1 tsb Worcestershire Sauce
  • 1 tsp Tabasco (optional)
  • 18 thin slices beef carpaccio
  • Fleur de sel
  • Freshly-milled pepper
  • Mix the olive oil, Worcestershire sauce and Tabasco in a bowl.

    In each plate, place 3 slices of carpaccio, sprinkle with a few drops of the olive oil mixture, add salt and pepper, top with the Comté shavings and serve.
