  • 16 scallops with roe
  • 1 tbsp crushed truffle (or truffle oil)
  • 1 package mixed young salad
  • Olive oil or truffle oil
  • Fleur de sel
  • Freshly ground pepper
  • Wash, dry and dice the scallops after placing them in the freezer for a few minutes.

    Place them in a mixing bowl with the crushed truffle or truffle oil and refrigerate for 1 hour.

    Season.

    Before serving, divide the Carpaccio evenly in individual serving dishes.
