For 4 people
  • 40 cl whipping cream
  • 4 passion fruits
  • 12 tbsp Tagada strawberry syrup
  • 1 g agar agar (found in health food shops)
  • In a saucepan, mix the cream with 6 tbsp of syrup and ½ g of agar agar and bring to a boil; boil for 3 min.

    Fill the glasses half way with the cream, allow to cool and refrigerate for 2 hours.

    Cut the passion fruit in half, remove the seeds and pulp with a small spoon, and set aside.

    Boil 50 cl of water with 6 tbsp syrup and ½ g agar agar for 3 min. Remove from heat, add passion fruit, allow to cool, fill the glasses all the way and refrigerate for at least 2 hours.

    Serve chilled.
