  • 2 zucchini
  • 3 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 bunch coriander, chopped
  • 2 tbsp lime juice
  • 400 g top skirt of beef, ground
  • Salt
  • Freshly milled pepper
  • Wash, dry and cut the zucchini lengthwise into slices 1 cm thick.

    Lay a sheet of parchment paper on a baking pan and spread the zucchini slices on it.

    Bake under the oven grill for 5 minutes on each side.

    Remove the grilled zucchini slices, season and brush with olive oil. Mix 2 tbsp olive oil, the soy sauce, coriander, lime and pepper in a bowl, add the meat, and mix.

    Place a piece of meat atop each slice of zucchini and roll tightly, like maki sushi.

    Garnish with a coriander leaf and serve immediately.
