Goose Rillettes on Cucumber

  • 1 220 g container of goose rillettes
  • 4 slices country style bread
  • 1 cucumber
  • 10 tarragon leaves
  • Rock salt
  • Freshly milled pepper
  • Wash and peel the cucumber: when peeling, leave every other strip of the green skin on the cucumber for decoration.

    Cut into thin rounds (using a food processor), and put in the rock salt for 10 min.

    Rinse and wipe dry with paper towels.

    Toast the country bread and cut it into rounds the diameter of the cucumber.

    Place a few slices of cucumber on the bread and top with a spoonful of goose rillettes.

    Decorate with a tarragon leaf.
