Paccheri summer salad with Mozzarella

  • 18 paccheri (or other large-sized pasta that can be stuffed)
  • Salt
  • Freshly-milled pepper
  • Summer salad : 100 g Roma tomatoes (oblong)
  • 6 anchovy fillets in oil
  • Cook the pasta al dente in a large saucepan of boiling salted water, for around 15 min.

    Drain the pasta, rinse under cold water and set aside.

    Dice the tomatoes, slice the anchovy fillets in half and place them in a bowl along with the Mozzarella and olive oil.

    Season to taste and mix.

    Stuff the pasta, season with pepper, decorate with basil and serve chilled.
