Sweet Potato Soup with Flaky Sesame Pastry

  • 800 g sweet potatoes
  • 30 g butter
  • 2 minced onions
  • 1 tbsp fresh coriander, chopped finely
  • Salt
  • Freshly milled pepper
  • Flaky Sesame Pastry: 1 230 g roll flaky/puff pastry
  • 1 tbsp white sesame seeds
  • 1 tbsp black sesame seeds
  • olive oil
  • Cut the sweet potatoes into large pieces.

    Brown the onions in butter in a pot over high heat, then add the sweet potatoes and 10 cl water, season, lower the heat and cook 20 min. until the sweet potatoes are fully cooked. Mix with an electric mixer to get a slightly creamy soup.

    Just before serving, sprinkle with coriander.

    Prepare the flaky sesame pastries: unroll the flaky pastry, keeping the parchment paper beneath it.

    Brush the crust lightly with olive oil, cut strips 3 cm wide, sprinkle with the mixed sesame seeds, and twist the pastry strips.

    Preheat the oven to 210 °C and bake for 10 min. on a non-stick baking sheet.
