  • 12 sheets Phyllo/Filo dough
  • 300 g Feta cheese
  • 1 Petit Billy cheese
  • 100 g pine nuts
  • 2 bunches mint
  • Salt
  • Freshly milled pepper
  • Remove the mint leaves from the stems, keep around twenty and chop up the others.

    In a mixing bowl, mix the two cheeses, mint and pepper, add the pine nuts and mix again.

    Spread a sheet of Phyllo/Filo dough onto the worktop and cut it in half.

    Place a spoonful of cheese mixture at the center and a mint leaf at the top.

    Fold the three round edges and wrap them tightly around the cheese.

    While rolling, add a mint leaf. Repeat with the rest of the ingredients.

    In a frying pan, melt the butter and brown the cheese cigarettes.

    Place them on a sheet of paper towel to dry, then in an eggcup with a mint leaf.
